POTATO SALAD RECIPE #1
Salad Ingredients:
- 8 cups cooked, peeled, cubed cold potatoes
- 2 tablespoons snipped green onions
- 1 cup celery; chopped
- 2/3 cups sweet pickles, chopped (do not use relish)
- 1 cup of pitted black or green stuffed olives
- 2 tablespoons Pimiento, chopped
- 1/2 small Tomato, seeded and chopped
Dressing Ingredients:
- 1/2 cup sour cream
- 1/2 cup Miracle whip
- 1 cup mayonnaise
- 2 tablespoons prepared mustard
- 3 tablespoons sugar
- 1 teaspoon onion salt
- 1/2 teaspoon pepper
Instructions:
Combine dressing ingredients and set aside.
Combine remaining ingredients in large bowl. Coat well with the dressing. Refrigerate at least an hour before serving.
Ingredients:
- 2 pounds russet potatoes
- 1 cup mayonnaise
- 4 teaspoons sweet pickle relish
- 4 teaspoons sugar
- 2 teaspoons minced white onion
- 2 teaspoons prepared mustard
- 1 teaspoon vinegar
- 1 teaspoon minced celery
- 1 teaspoon diced pimentos
- 1/2 teaspoon shredded carrot
- 1/4 teaspoon dried parsley
- 1/4 teaspoon pepper
- dash salt
1. Lightly peel the potatoes (you do not have to get all of the skin off) then chop them into bite-size pieces and boil in 6 cups of boiling, salted water for 7 to 10 minutes. The potato chunks should be tender, yet slightly tough in the middle when done. Drain and rinse potatoes with cold water.
2. In a medium bowl, combine remaining ingredients and whisk until smooth.
3. Poured drained potatoes into a large bowl. Pour the dressing over the potatoes and mix until well combined.
4. Cover and chill for at least 4 hours. Overnight is best.
Makes 6 cups (about 8 servings).
Ingredients:
- 5 to 10 pounds potatoes, cooked and diced
- 1 cup pickle relish
- 5 boiled eggs, chopped
- 1 cup chopped onion
- 1/2 stalk celery, chopped
- 1/2 teaspoon pepper
- 2/3 cup sugar
- 1/2 cup mustard
- 4 cups salad dressing
Mix ingredients well and add cooked, diced potatoes (about 5-10 lbs.).
Ingredients:
- 8 to 10 medium-large sized potatoes, cooked, diced
- 1 cup dill pickle cubes or dill pickle relish
- 5 boiled eggs, chopped
- 1.5 cups chopped onion
- 4 stalks celery, chopped
- 1 can whole small black olives
- 1 ro 2 jalapeno peppers, diced
- 1 to 2 teaspoons celery seed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon parsley
- 2/3 cup red bell pepper
- 1/2 cup yellow mustard
- 1/2 cup lemon juice
- 3 to 4 cups mayonnaise
- Paprika
Mix ingredients well and add cooked, diced potatoes. Sprinkle top with paprika. Chill for several hours to blend flavors.
