BASIC MUESLI RECIPE #1

Ingredients
    4-1/2 cups rolled oats
    1/2 cup toasted wheat germ
    1/2 cup wheat bran
    1/2 cup oat bran
    1 cup raisins
    1/2 cup chopped walnuts
    1/4 cup packed brown sugar
    1/4 cup raw sunflower seeds

Directions: In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, sugar, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.


BASIC MUESLI RECIPE #2

Ingredients

    7 medium apples
    1 cup of rolled oats
    1/4 cup of raisins
    1/4 cup almonds (optional)
    1/2 teaspoon cinnamon

Cut the apples into wedges and remove the core.
Juice the apple wedges and reserve 2-1/4 cups of the juice and 1/2 cup of the pulp.
In a medium size bowl, combine the apple juice and pulp with the oats, raisins, almonds and cinnamon; mix well.
Cover the bowl and place in the refrigerator.
Allow the muesli to soak overnight.

To serve, pour some of the muesli into a bowl and add fresh berries or banana slices.

Yield: 3-1/2 cups
Preparation time: 10 minutes
Chill: overnight




GLUTEN-FREE MUESLI RECIPE

This muesli is an excellent source of dietary fiber.

Ingredients: to make four breakfast portions.

Mix 2 ounces or 50 grams of each ingredient and keep the mixture in a sealed container in a cool dry place for up to a week.

Equal quantities of:
    Sunflower seeds
    Chopped dates
    Chopped figs
    Sultanas
    Banana chips
    Chopped mixed nuts
    Pine nuts
    Cooked flake rice
    Honey

Mix well. Serve with milk or pour on a fruit juice.

Variations:

Add equal quantities of any of the following:
    Cooked flake millet
    Shredded coconut






MUESLI RECIPE VARIATION #1
    1/2 cup Basic Muesli
    2/3 cup Milk
    8 ounces Unflavored homemade yogurt
    1 Grated apple
    Honey to taste
    Lemon juice
    sultanas
    currants
    Chopped dried apricots
    1 tablespoon Whipped cream (optional)

    Soak muesli in milk overnight.

Next morning add yogurt, grated apple, honey, lemon juice and any of the dried fruits. Fold in whipped cream if desired.

2 generous servings.




SPECIAL MUESLI RECIPE VARIATION #2

Soak equal quantities of Basic Muesli Recipe with organic apple juice. Leave for a few minutes while you grate an apple and add two large tablespoons of low fat yogurt and serve.




CRUNCHY APPLE MUESLI CRUMBLE
    4 Granny Smith Apples peeled, cored and sliced
    3 tablespoons apricot or mango nectar
    2 bananas thinly sliced
    1 teaspoon cinnamon

Cook apples in nectar and cinnamon until soft. Place in oven proof dish and cover with banana.

Make a crumble from:
    8 tablespoons of Fruit or Original Basic Muesli
    4 tablespoons of Rolled oats
    1 tablespoon of Butter

Spread crumble mix over dish and bake at 180 degrees for about 20 minutes or until golden. Enjoy!




MUESLI & PEAR MUFFINS
    3 Eggs
    1/4 cup Brown sugar
    1/4 cup Flour
    2 Pears - sliced thinly sliced
    7/8 to 1 cup Basic Muesli - Any variety
    dash Vanilla extract
    Cinnamon

Mix all ingredients together well and spoon between greased muffin tray slots then bake on 325°F for 15 - 20 minutes or until golden.
