The germ of a cereal is the reproductive part that germinates to grow into a plant. Wheat germ is the embryo of the wheat berry. Along with bran, germ is often a by-product of the milling that produces refined grain products. Cereal grains and their components, such as wheat germ, rice bran, and maize may be used as a source from which vegetable oil is extracted, or used directly as a food ingredient. The germ is retained as an integral part of whole grain foods.
Wheat germ is a concentrated source of several essential nutrients including vitamin E; most of the B vitamins such as folate (folic acid) and thiamin; the minerals calcium, zinc, magnesium, and phosphorus; as well as essential fatty acids and fatty alcohols; and several trace elements. It is also a good source of fiber.
Wheat germ is very high in protein. It contains around 28 percent protein and has more protein than can be found in most meat products. The human body needs protein in order to repair tissue damage and to help minerals and nutrients reach our cells. The amount of nutrients that are contained within wheat germ seems endless. It contains more potassium and iron than any other food source. Also found in great quantities are riboflavin, calcium, zinc magnesium and vitamins A, B-1 and B-3. Vitamins B-1 and B-3 are very important to maintain energy levels and maintain healthy muscles, organs, hair and skin.
Another important vitamin found in wheat germ is vitamin E. Vitamin E is a very important antioxidant. It is helpful in preventing the body's aging process and also to prevent heart disease. Vitamin E also helps to prevent blood clots and is needed to strengthen the body's immune system.
Wheat germ has been found to be very beneficial in order to keep the body in tip top condition. It is used by athletes in their diet to improve cardiovascular function and improve endurance levels. Body builders will also add wheat germ to their diets in order to bulk up and maintain the nutritional levels they need to perform.
It is recommended that all women of childbearing age get sufficient amounts of this nutrient to prevent neural-tube birth defects. Folic acid reduces a compound in your body called homocysteine. Lower levels of homocysteine have been linked to reducing the risk of heart disease, osteoporosis bone fractures, and dementia.
Wheat germ also contains a phytonutrient called L-ergothioneine, which is a powerful antioxidant that is not destroyed by cooking. The fiber boost you get from wheat germ is significant.
WHEAT GERM USES & STORAGE
Wheat germ can be added to protein shakes, casseroles, muffins, pancakes, cereals, yogurt, cookies, and other baked goods. One problem with wheat germ is that it becomes rancid easily. Wheat germ can become rancid if not properly stored in a refrigerator or freezer, and away from sunlight. If you purchase wheat germ separately from the flour, make sure the product is fresh. If should be either vacuum packed or refrigerated, with a packing date or a label stating the day by which the product should be used. Toasted wheat germ has a longer life, but the raw product is better because it is unprocessed. Wheat germ oil liquid and capsules are also available.
