Wheat germ is the embryo of the wheat berry. It is a good source of vitamin E; most of the
B vitamins; the minerals calcium, magnesium, and phosphorus; and several trace elements.
One problem with wheat germ is that it becomes rancid easily. If you purchase wheat germ
separately from the flour, make sure the product is fresh. If should be either vacuum packed
or refrigerated, with a packing date or a label stating the day by which the product should be
used. Toasted wheat germ has a longer life, but the raw product is better because it is
unprocessed. Wheat germ oil capsules are also available.
