The Kombucha, or Manchurian, "mushroom" has reputedly been used in Asian countries and in Russia for centuries. The "mushroom" itself is not eaten. Rather, a tea is made by formenting the "mushroom" for about a week in a mixture of water, sugar, and green or black tea, with apple cider vinegar or a bit of previously made tea added. Kept in the mixture, the "mushroom" reproduces, and the "daughter mushrooms" can then be used to produce more tea.
Although commonly referred to as a mushroom, the kombucha is not a mushroom but is actually a combination of a number of different elements, including a cultured growth of lichen, beneficial bacteria, and yeast that form a mushroom shaped colony bound in cellulose matrix. Kombucha propagates or recreates another "culture" similar to itself during the fermentation process. When it ferments it produces alcohol, which is then converted into acetic acid (i.e., vinegar). Vinegar has been used by humans for thousands of years. The Assyrians, Greeks and Romans thought it an important medicine in its own right.
Kombucha tea contains a variety of different nutrients and other health-promoting substances. It is a natural energy booster and detoxifier that may also help slow or reverse the aging process and fight such serious diseases as AIDS, cancer, and multiple sclerosis.
Kombucha is used to support the healing of a wide variety of diseases and is used in many countries throughout the world. It is said that in Manchuria, the home of Kombucha, not one case of cancer has been detected where the people religiously drink the Kombucha tea. Kombucha contains Vitamins B and C as well as concentrated amounts of protein that is available for immediate use by the body. The naturally formed acid content of Kombucha helps to counter difficulties associated with aging and is thus used as a longevity elixir. Kombucha delivers positive influence on the entire body, rather than targeting specific body organs. It has strong antibiotic, antiseptic and detoxifying properties. It is a blood pH normalizer and assists the body in stabilizing metabolic processes.
Because of the way in which it has traditionally been propagated (one at a time, by individual users), kombucha may be difficult to find. Many people who have them received a daughter "mushroom" as a gift from a friend, although there are some herbal companies that sell both the "mushrooms" and the bottled tea commercially.
