    DAIRY (MILK-RELATED) FOODS DESCRIPTION

    A dairy product or milk product is food produced from the milk of mammals. Dairy products are usually high energy-yielding food products. A production plant for the processing of milk is called a dairy or a dairy factory. Apart from breastfed infants, the human consumption of dairy products is sourced primarily from the milk of cows, water buffaloes, goats, sheep, yaks, horses, camels, domestic buffaloes, and other mammals. Dairy products are commonly found in European, Middle Eastern, and Indian cuisine, whereas aside from Mongolian cuisine they are little-known in traditional East Asian cuisine.

    Eggs are often included under the listing of DAIRY, even though they are not milk-based products. Some basic egg information will be included here.

    LACTOSE INTOLERANCE & MILK ALLERGY

    Dairy products can cause health issues for individuals who have lactose intolerance or a milk allergy. Additionally dairy products including cheese, ice cream, milk, butter, and yogurt can contribute significant amounts of cholesterol and saturated fat to the diet. Diets high in fat and especially in saturated fat can increase the risk of heart disease and can cause other serious health problems.

    DAIRY AVOIDANCE

    Some groups avoid dairy products for non-health related reasons:
    • Religious: Some religions restrict or do not allow for the consumption of dairy products. For example, some scholars of Jainism advocate not consuming any dairy products because dairy is perceived to involve violence against cows. Strict Judaism requires that meat and dairy products not be served at the same meal, served or cooked in the same utensils, or stored together, as prescribed in Deuteronomy 14:21.

    • Ethical: Veganism is the avoidance of all animal products, including dairy products, most often due to the ethics regarding how dairy products are produced. The ethical reasons for avoiding dairy include how dairy is produced, how the animals are handled, and the environmental effect of dairy production.

    This is a list of basic dairy products. A dairy product is food produced from the milk of mammals. A production plant for the processing of milk is called a dairy or a dairy factory. Dairy farming is a class of agricultural, or an animal husbandry, enterprise, for long-term production of milk, usually from dairy cows but also from goats, sheep and camels, which may be either processed on-site or transported to a dairy factory for processing and eventual retail sale.

    While eggs will keep in your refrigerator for several weeks, it is important to note that they can lose some quality.

    A little known fact about eggs is that they can absorb odors from your refrigerator if stored in an open container, although this should not be a major problem unless you are storing eggs along side opened containers of onions and garlic or other such strong smelly foods.

    Do you need only egg whites or only egg yolks for a particular recipe? Do not throw out the leftovers, find another recipe to cook which will use the other portion).

    Once out of the shell, you can keep eggs whites for about a week in the refrigerator and egg yolks will keep for two or three days, although be sure to cover them with water.

    HOW TO SEPARATE EGGS

    Cold eggs are easier to separate. Gently crack the egg open in the center, either hitting it gently with a knife, or using a convenient counter edge. Hold the egg upright and gently pull off the top half of the shell. You now have three options:
    • Hold your hand over the egg white bowl, pour the egg into your hand and let the egg white ooze through your fingers while retaining the yolk in your hand - a very easy, albeit unelegant, way to separate eggs. Make sure to wash your hands first.

    • Over the egg white bowl, gently pour the contents between the two shell halves, allowing the egg whites to pour out in the process, leaving just the yolk in the shell.

    • Buy a kitchen gadget called an egg separator, which looks like a small measuring cup. The egg yolk is retained in the cup while the whites are allowed to drip through.

    BEATING EGG WHITES

    Egg whites WILL NOT WHIP (they just will not) if they come into contact with even the slightest trace of fat, grease or egg yolk. This is why it is a good idea when separating eggs to have three bowls: one for the yolks, one for the whites and one bowl to separate over so that you will not have to throw out a whole batch if one yolk breaks while separating. It is also a good idea to wash your hands, beaters and bowl in hot soapy water, rinsing well, before beginning to make sure they are grease free. Glass or metal bowls are easier to clean and keep grease free than plastic bowls.

    Egg whites that are at room temperature will whip easier and faster. You can add 1/4 teaspoon of cream of tartar to help the process along (although it is not necessary unless your recipe calls for it). Use an electric mixer for best results, although you can use a whisk if you want a good arm workout. Egg whites are considered "stiff" when the bowl can be turned over upside down without the beaten whites moving in the bowl.

    HOW TO COOK EGGS

    BOILED EGGS: Put your eggs in a pot (avoid aluminum as it will darken) and cover with cold water. Add a pinch of salt. Bring the pot to a boil over high or medium high heat, then lower the heat and simmer. Depending on the size of your egg, they will need to simmer for 2 to 3 minutes for soft boiled, about 4 to 5 minutes for medium and 5 to 20 minutes for hard boiled. Drain the eggs and immerse them immediately in cold water to stop the cooking process. Refrigerated boiled eggs will keep for about a week.

    Approximate simmering times for large eggs direct from the refrigerator to the pan of cold water and cooked at sea level:
      2 minutes: The white is not fully set, very soft and the yolk is totally raw.
      4 minutes: The white is softly set, but the yolk is thick and runny.
      6 minutes: The white is fully set, and the yolk is still semi-runny in the middle.
      8 minutes: The white is fully set and firm, and the yolk is tender and soft.
      10 minutes: The white is fully set and firm, and the yolk is fully set and medium firm.
      12 minutes: The white if fully set and firm, and the yolk is fully set, hard (completely cooked) and firm.

    FRIED EGGS: Add a small amount of butter or oil to your skillet (non-stick pans will need very little to none of this) and heat. When you can drop a drop of water into the pan and hear it sizzle, it is time to cook the eggs. Carefully crack the eggs into the pan. For sunny side up eggs, allow them to cook for about 3 to 4 minutes without turning (or until they are done to a consistency you like), before removing them from the pan. If you prefer your eggs turned over, first cook the eggs for about 2 minutes before using your spatula to flip the eggs over. The amount of time the turned eggs are cooked will depend on how you like to eat your eggs. Sunny side up, the white and yolk is cooked on one side and the other is still soft and runny. Over easy eggs are cooked on both sides, with a completely cooked white and runny yolk. Over hard eggs are cooked on both sides with cooked white and firmly set cooked yolk.

    SCRAMBLED: The cooking procedure for scrambled eggs is the same as for fried. First beat your eggs in a bowl (you can add a tablespoon or so of milk per egg as well as salt, pepper, seasonings etc.). Pour into the skillet and cook while gently stirring until the eggs reach the desired consistency.


    SCRAMBLED EGGS RECIPE


    Serves 1

    2 large eggs at room temperature
    1 tablespoon milk or cream
    Salt and pepper
    1.5 tablespoons unsalted butter

    Crack eggs into medium bowl. (Note: to avoid shells falling into your eggs, tap the eggs on a flat surface rather than the edge of your bowl or sink. If a bit of shell does make it into the bowl, scoop it out with the edge of an egg shell - it is more efficient than chasing it about with your fingers or a spoon). Season with salt and pepper and add milk. Whisk until the mixture is frothy and pale yellow, 1 to 2 minutes.

    Heat 1 tablespoon of the butter in a small nonstick skillet over medium-low heat. Once melted, pour in the eggs and start stirring in small concentric circles all around the pan with a heatproof rubber spatula or wooden spoon, making sure to scrape up and incorporate eggs on the bottom and sides of pan.

    Small curds will start to develop; keep stirring. Once most of the egg mixture is set, drop in the remaining 1/2 tablespoon butter and turn off heat. Keep stirring to incorporate the butter and serve. Eat immediately.

    POACHED: Cover the bottom of a small pot or skillet with about two inches of water and bring to a simmer. Break an egg into a small bowl. Stir the water to create a small whirlpool effect and drop the egg into the center. Cook for 3 to 5 minutes before removing the egg with a slotted spoon.

    4 to 6 large, very fresh eggs (under four days old)
    A suitably sized frying pan (according to the number of eggs)
    Boiling water from a tea kettle
    A draining spoon and a folded paper towel or napkin

    The key to a well-poached egg is to keep the water at a bare simmer throughout the cooking. Place the frying pan over a gentle heat and add enough boiling water from the kettle to fill it to 1 inch. Keep the heat gentle, and very quickly you will see tiny bubbles beginning to form over the base of the pan. Carefully break the eggs, one at a time, into the water and let them barely simmer, without covering, for just 1 minute. Using a timer is highly recommended for exact timing. Remove the pan from the heat and let the eggs sit undisturbed in the hot water, timing them for 10 minutes. This timing will give perfect results for a beautifully translucent, perfectly set white and a soft, creamy yolk. Remove each egg by lifting it out of the water with the draining spoon and then letting the spoon rest for a few seconds on the kitchen paper, which will absorb the excess water. As eggs are removed, they are immediately served.

L. acidophilus also produces lactase, the enzyme that breaks down milk sugar (lactose) into simple sugars. Fermented milks had been made since early times, when warm raw milk from cows, sheep, goats, camels, or horses was naturally preserved by common strains of Streptococcus and Lactobacillus bacteria. (The 'cultures' were obtained by including a small portion from the previous batch.) These harmless lactic acid producers were effective in suppressing spoilage and pathogenic organisms, making it possible to preserve fresh milk for several days or weeks without refrigeration.
