  • BUTTERMILK DESCRIPTION

    Since ancient times, milks have been used as natural cleansers and skin softeners, and Buttermilk is one of the best you can use. Buttermilk refers to a range of fermented milk drinks, common in warm climates where unrefrigerated fresh milk sours quickly, as well as in colder climates.

    Butter is made by churning cream which separates the cream into butter solids and buttermilk. Real or traditional buttermilk is the liquid left after the butterfat is separated from milk or cream. As a product of buttermaking, it is a slightly sour liquid caused by lactic acid bacteria while fermenting lactose, the primary sugar in milk. Cream is often left to sour for 8 hours prior to buttermaking (though not always for fresh cream butter), buttermilk is often considered a fermented or cultured dairy product.

    Traditionally, before cream could be skimmed from whole milk, the milk was left to sit for a period of time to allow the cream and milk to separate. During this time, naturally occurring lactic acid-producing bacteria in the milk fermented it. This facilitates the butter churning process, since fat from cream with a lower pH coalesces more readily than that of fresh cream. The acidic environment also helps prevent potentially harmful microorganisms from growing, increasing shelf-life. However, in establishments that used cream separators, the cream was hardly acidic at all.


    Commercially Buttermilk is fermented milk, usually made by adding lactic acid bacteria to regular milk that has been pasteurized and homogenized with 1% to 2% fat. This fermented dairy product known as cultured buttermilk is produced from cow's milk and has a characteristically sour taste caused by lactic acid bacteria. This variant is made using one of two species of bacteria - either Lactococcus lactis (formerly known as Streptococcus lactis) or Lactobacillus bulgaricus, which creates more tartness. Leuconostoc citrovorum is used to stimulate the naturally occurring bacteria in the old-fashioned product. Some dairies add colored flecks of butter to cultured buttermilk to simulate residual flecks of butter that can be left over from the churning process of traditional buttermilk.

    The tartness of buttermilk is due to acid in the milk. The increased acidity is primarily due to fermented lactose and as the bacteria produce lactic acid, the pH of the milk decreases and casein, the primary milk protein, precipitates, causing the curdling or clabbering of milk. The process makes buttermilk thicker than plain milk. While both traditional and cultured buttermilk contain lactic acid, traditional buttermilk tends to be less viscous, whereas cultured buttermilk is more viscous.

    At home, in a pinch, you can make a buttermilk substitute. Use a small amount of vinegar or lemon juice mixed with milk and leave it sitting for about 10 minutes to thicken in place of cultured buttermilk. This is known as acidified buttermilk. Any level of fat content for the milk ingredient may be used, but whole milk is usually used for baking. In the process which is used to produce paneer (a fresh cheese common in South Asia) such acidification is done in the presence of heat. It is an unaged, acid-set, non-melting farmer cheese or curd cheese made by curdling heated milk with lemon juice, vinegar, or any other food acids. Its crumbly and moist form is called chhena in eastern India and in Bangladesh.

    Like powdered milk, buttermilk is available in a dried powder form. This stores well at room temperature and is usually used in baked goods.

    BUTTERMILK SUBSTITUTES

    Making a buttermilk substitute may be necessary if you do not have buttermilk in the refrigerator and your recipe calls for buttermilk. The closes substitute would be another dairy product with a little acidity added. Milk with a spoonful of lemon juice or white vinegar does the job nicely. This mixture will not get as thick and creamy as buttermilk, but it will perform its role in the batter just as well.

    Yogurt or sour cream thinned with milk (or plain water) also works well as a buttermilk substitute.


    BUTTERMILK SUBSTITUTE RECIPE #1

    The following recipe makes 1 cup, but it can be reduced or multiplied as needed to fulfill your buttermilk requirements.

    Ingredients
      1 scant cup milk (whole, 2%, or heavy cream)
      1 tablespoon lemon juice or white vinegar
    Instructions

  • Combine the milk and lemon juice. Measure 1 scant cup of milk. Stir in 1 tablespoon of lemon juice or white vinegar.
  • Let stand 5 to 10 minutes. Let the mixture stand at room temperature for 5 to 10 minutes.

  • When it is ready, the milk will be slightly thickened and you will see small curdled bits. This substitute will not become as thick as regular buttermilk; you will also not notice the curdled bits in your finished recipe. Use the buttermilk. Use this substitute (including curdled bits) as you would buttermilk in your recipe.


    BUTTERMILK SUBSTITUTE RECIPE #2

    Ingredients
      1 cup milk
      4 1/2 teaspoons white vinegar, or fresh lemon juice
    Instructions

    Place the vinegar in a glass-measuring cup, and add enough milk to make 1 cup total liquid. Stir to combine and let stand for 10 to 15 minutes (The mixture will begin to curdle). Use as needed in a recipe, or cover and refrigerate until needed.

    OTHER BUTTERMILK SUBSTITUTES

  • Yogurt: Mix 3/4 cup plain yogurt with 1/4 cup water to thin. Use as you would buttermilk.
  • Sour Cream: Mix 3/4 cup sour cream with 1/4 cup plain water to thin. Use as you would buttermilk.
  • Kefir: Thin kefir as needed with milk or plain water until it reaches the consistency of buttermilk. Use as you would buttermilk.
  • Cream of Tartar: Mix 1 cup of milk with 1 3/4 teaspoons cream of tartar. Let stand 5 to 10 minutes until slightly thickened and curdled.


  • As with all dairy, pasteurization extends shelf life but it kills all the present beneficial bacteria. Instead of going to the store and picking up a carton of cheap ultra-pasteurized fake buttermilk, consider finding a source for high-quality, organic, grass-fed milk, or farm-fresh milk, separate the cream, churn the butter and produce real buttermilk yourself.

    Buttermilk is lower in fat than whole milk or cream, but has all the protein and vitamin content of whole milk, and it is an excellent nutrient, softener and moisturizer for sensitive or irritated skin.

    Using buttermilk along with baking soda in recipes provides an effective leavening agent without having to add yeast, giving you light and fluffy baked goods. Buttermilk may also provide some health benefits.





    BUTTERMILK USES, HEALTH BENEFITS, & SCIENTIFIC EVIDENCE

    A VARIETY OF BUTTERMILK USES

    Not only does Buttermilk work to cleanse and soften skin, but it can be taken internally to treat piles, diarrhea, jaundice, cirrhosis, and hypertension. Preliminary studies have shown that the lipid, sphingomyelin, in Buttermilk may have anti-cancer properties. Buttermilk is an ingredient in many supplements, products and foods. You can drink buttermilk straight. Often some spices such as cumin powder, pepper, ginger, green chillies, curry leaves and coriander or cilantro leaves are crushed and added to the mixture to enhance its taste and therapeutic benefits. Buttermilk can also be used in cooking. Soda bread is a bread in which the acid in buttermilk reacts with the rising agent, sodium bicarbonate, to produce carbon dioxide which acts as the leavening agent.

  • Beverage: Lots of people drink it straight up. I like it cold with a sprinkle of salt and a dash of black pepper on top to go with the slightly acidic sour flavor of the cultured buttermilk. Some people prefer whole milk, so instead of drinking it plain, it can be mixed into morning smoothies. It is an easy and efficient way to get the benefits of it into your daily routine.

    BUTTERMILK IN THE KITCHEN

    Buttermilk is excellent in baked goods, and also as a soup and salad dressing base. It lends a rich, hearty flavor with fewer calories than milk or cream. The tangy flavor of buttermilk goes well with sweet fruits such as peaches, cherries, and pears, particularly as creme fraiche.

    The acidic properties of buttermilk make it an effective and flavorful marinade, particularly with poultry. It is used as an acidic ingredient in baked goods to combat dingy grayish discoloring often caused by the chemical reaction of blueberries, walnuts and other foods that give off a blue cast. It also promotes browning of baked goods and improves texture. Many prefer dipping meat, poultry and fish in buttermilk rather than milk before coating for frying and baking.

    Unless you feel adventurous and are not concerned about failure, use leavened recipes specifically designed with buttermilk as an ingredient rather than substituting buttermilk for milk. In savory recipes, this is not such a concern as usually no leavening is involved, but be aware that a slight tangy flavor will be imparted to the food, much like that of sour cream or yogurt.

    PERFECT BUTTERMILK BISCUITS RECIPE

    Ingredients
      2 cups all-purpose flour
      2 teaspoons baking powder
      1/4 teaspoon baking soda
      1/4 teaspoon salt
      1/2 cup butter, cold
      3/4 cup buttermilk
      1 tablespoon butter, melted
    Instructions

    Heat oven to 450°F. Combine flour, baking powder, baking soda and salt in a large bowl; Cut in butter until crumbly. Stir in buttermilk just until moistened. Turn dough onto lightly floured surface; knead about 10 times or until smooth. Roll out dough to 3/4-inch thickness. Cut with 2 1/2 inch biscuit cutter. Place 1 inch apart onto ungreased baking sheet. Brush biscuits with 1 tablespoon melted butter. Bake for 10 to 14 minutes or until lightly browned. Makes 8 biscuits.

    BUTTERMILK PIE RECIPE

    A simple recipe makes a great holiday dessert.

    Ingredients
      2 cups sugar
      4 tablespoons flour
      1/2 teaspoon salt
      1 stick butter, melted
      3 eggs, beaten
      1 cup buttermilk
      1 teaspoon vanilla
    Instructions

    After you mix all the ingredients together pour into an unbaked piecrust. Bake at 325°F for 1 hour.

    Ingredients
      2/3 cup buttermilk
      2 tablespoons olive oil
      1 tablespoon lemon juice
      1 teaspoon Dijon mustard
      1/2 teaspoon salt
      1/4 teaspoon black pepper
      1/4 teaspoon minced garlic
      2 tablespoons snipped chives
      1 tablespoon chopped fresh thyme
    Instructions

    In small bowl, whisk all ingredients until blended. Pour over salad and toss, or serve as a dip for crunchy vegetables.

    BUTTERMILK CORNBREAD

    Ingredients
      2 cups corn meal
      1-1/2 teaspoon baking powder
      1/2 teaspoon baking soda
      1 teaspoon salt
      1 egg, lightly beaten
      1-1/2 cup buttermilk
      2 tablespoons melted shortening or vegetable oil
      1 tablespoon bacon drippings, for pan (optional)
    Instructions

    Cornbread is best baked in a cast-iron skillet but, if you do not have one, a square Pyrex dish will do just fine.

    Preheat oven to 450°F. Stir together the dry ingredients and set aside. In a medium bowl, combine the beaten egg, buttermilk and oil. Combine the cornmeal mixture with the buttermilk mixture, stirring just enough to moisten.

    Pour into a very hot, well-greased 9- or 10-inch skillet or pan, muffin tins or corn stick molds. Bake about 12 to 15 minutes for muffins or corn sticks, and 18 to 20 minutes for pan or skillet. Cornbread will begin to pull away from sides of pan. Makes about a dozen muffins, corn sticks or pieces. Enjoy hot with lots of butter.
