    RICE HERBAL DESCRIPTION

    RICE GRAIN

    Rice Oryza sativa is the seed of the cereal. Brown rice is mostly carbohydrate but contains 7.5 percent protein, and small amounts of iron, calcium, and vitamins niacin and thiamin. Most rice is grown in standing water but 10 percent of the world crop is grown on dry land. An outer bran layer covers the rice grain which can be removed together with the nutrients it contains to produce white rice.

    Vitamin B-1 is present in the bran but not in the white grain. Rice is commonly cooked simply by boiling. The liquid in which it is boiled should also be utilized as this also contains vitamins. In China this is often served as a drink. Glutinous rice is a variety that becomes sticky and sweet when cooked. It does not contain gluten. Rice bran is a useful source of extra dietary fiber.

    WHITE vs BROWN RICE

    When rice is harvested, it must be processed before being sent to market. In the case of both white and brown rice, the inedible outer hull of the rice is removed so that the grain of the rice is accessible. To make the rice white, the individual grains are further stripped: the bran and germ and also removed, and the grains are polished to be white and smooth. Brown rice, however, is left with these outer layers intact, and since the bulk of the nutrition is available in these layers, it is better for the consumer.

    There are a number of reasons to strip rice down to the core grain. The first is that it cooks faster, and tends to create fluffier rice. In many parts of the world, this type of rice is preferred because some consumers feel that it tastes better. In addition, the nutrient rich outer layers of the rice also have a number of good fats, which can go rancid if the rice is poorly stored or not eaten soon enough. White rice is much more shelf stable than brown, and can be stored in more unfavorable conditions. Brown rice should be refrigerated, ideally, and also eaten within six months.

    Unfortunately, many people in developing countries rely heavily on rice for nutrition. While these people ate brown rice traditionally, a growing trend towards white rice consumption has led to nutritional deficits in some parts of the world. In some areas, rice producers are trying to stave off this problem by nutritionally fortifying their rice with essential vitamins and minerals, which is a positive step. However, it is impossible to replace the valuable fiber stripped away with the bran and germ of the rice grain.

    Fiber is an extremely important part of the human diet, and serves a number of dietary functions. Foods high in fiber help to maintain intestinal health, prevent cancer, fight obesity, and affect the probability of getting both heart disease and diabetes. For this reason, most dietary recommendations include a high consumption of whole grains, including brown rice. Many consumers, however, omit the "whole"; from the "grains," and eat a lot of heavily processed, stripped grain products like white bread and white rice, probably because these flavors appeal to their palates more. Sadly, these foods do not have the same dietary value that whole grains do, and heavy consumption of them can lead to dietary imbalances.

    RICE BRAN

    Rice bran is a byproduct of the rice milling process (the conversion of brown rice to white rice), and it contains various antioxidants that impart beneficial effects on human health. A major rice bran fraction contains 12 to 13-percent oil and highly unsaponifiable components (4.3-percent). This fraction contains tocotrienols (a form of Vitamin E), Gamma-Oryzanol and Beta-Sitosterol; all these constituents may contribute to the lowering of the plasma levels of the various parameters of the lipid profile. Rice bran also contains a high level of dietary fibers (beta-glucan, pectin and gum). In addition, it also contains ferulic acid, which is also a component of the structure of nonlignified cell walls. However, some research suggests there are levels of inorganic arsenic (a toxin and carcinogen) present in rice bran. One study found the levels to be 20-percent higher than in drinking water. Other types of bran (derived from wheat, oat or barley) contain less arsenic than rice bran, and are just as nutrient-rich.

    RICE BRAN OIL

    Rice bran oil is the oil extracted from the hard outer brown layer of rice after chaff ( rice husk). It is notable for its high smoke point of 232 C (450 F) and its mild flavor, making it suitable for high-temperature cooking methods such as stir frying and deep frying. It is popular as a cooking oil in several Asian countries, including Bangladesh, Japan, India and China.

    Rice bran wax, obtained from rice bran oil and palpanese extract, is used as a substitute for carnauba wax in cosmetics, confectionery, shoe creams and polishing compounds. It is an edible oil which is used in the preparation of vegetable ghee.

    Rice bran oil has a composition similar to that of peanut oil, with 38% monounsaturated, 37% polyunsaturated, and 25% saturated fatty acids. The fatty acid composition is

    RICE BRAN HEALTH BENEFITS

    A component of rice bran oil is the antioxidant gamma-oryzanol, at around 2-percent of crude oil content. Thought to be a single compound when initially isolated, it is now known to be a mixture of steryl and other triterpenyl esters of ferulic acids. Also significant is the relatively high fractions of tocopherols and tocotrienols, together as vitamin E. Rice bran oil is also rich in other phytosterols.

    Cholesterol: Rice bran oil has been tested to reduce cholesterol levels. Literature review shows rice bran oil and its active constituents improve blood cholesterol by reducing total plasma cholesterol and triglycerides, and increasing the proportion of HDL cholesterol. Results of an animal study indicated a 42-percent decrease in total cholesterol with a 62-percent drop in LDL cholesterol, when researchers supplemented test subjects' diets with fractionated vitamin E obtained from rice bran oil.

    Menopause: One small-scale study of gamma-oryzanol, a mixture of chemicals found in rice bran oil, found that 90-percent of the women had some form of relief from hot flashes after taking a supplement of the purified concentrate for four to six weeks.

    Antioxidant Stability: The oryzanol content of the pan heated rice bran oil samples remains approximately the same even when heated at 180°C for 8 hours, while a decrease in oryzanol content was reported in the case of microwave heating at the same conditions.

    Omega Fatty Acids & Inflammation: Rice bran oil has about 2-percent omega 3 fatty acids in it (more than Olive Oil), and 33-percent omega 6 fatty acids. Its omega 6-to-omega 3 ratio is much higher than olive oil. A high omega 6-to-omega 3 ratio can be a factor in increasing inflammation.

    Calcium Absorption: Rice bran might help lower cholesterol because the oil it contains has substances that might decrease cholesterol absorption and increase cholesterol elimination. One of the substances in rice bran might decrease calcium absorption; this might help reduce the formation of certain types of kidney stones.

    GAMMA ORYZANOL

    Gamma oryzanol is a substance that is taken out of rice bran oil. It is also found in wheat bran and some fruits and vegetables. People use it as medicine. Gamma oryzanol is used for high cholesterol and symptoms of menopause and aging. Some people use it for increasing testosterone and human growth hormone levels, as well as improving strength during resistance exercise training.

    The dosages of Gamma-oryzanol used are highly variable, with some studies using a lower dose (50 mg once daily or 20 mg three times daily) and other studies using a markedly higher dosage (300 to 800 mg daily). As there are no reliable benefits associated with Gamma-oryzanol supplementation in the first place, it is unsure what dosage should be recommended.

    RICE FLOUR

    Rice flour is a fine flour made from ground rice. It is completely gluten free, including even "glutinous rice flour," which is made from sweet rice and is a staple for making Japanese treats like mochi. Rice flour can be used in a wide variety of culinary uses and is a very popular base for noodles in many Asian cuisines. It can also be used as a thickener in sauces, as a breading for fried dishes and as the base for various baked goods. It is available in white, which is made from polished white rice, and in brown, which is made from whole grain brown rice. Both types of flour work just about the same way in a recipe, but have slightly different flavors and colorings. Brown rice flour can take longer to cook when it is in noodle form, for instance, as brown rice takes longer to cook than white rice.

    Rice flour is very commonly used in gluten free baked goods to give them structure and substance, but it is also a popular addition for non gluten free baked goods because of its unique and slightly sandy texture. For instance, a small amount of white rice flour in a buttery shortbread recipe can make that shortbread extra tender and crumbly, with a melt-in-your-mouth feeling. It can also add a heartiness to a yeast bread recipe when a small amount is added, since it contains no gluten and will compact a bread dough somewhat, so it can be found in some dense, whole grain bread

    Making rice flour can help you save money, especially if you or anyone in your family eats a gluten-free diet or suffers from celiac disease. The gluten in wheat flour can cause indigestion and other undesirable side effects. Since many foods are made with wheat flour, if you have a gluten intolerance you can be limited to what to eat. Opting to learn how to make rice flour with either white or brown rice can enable you to make your favorite "off-limits" foods with rice flour in place of the wheat.

    Ingredients include white or brown rice.
      1. Purchase brown or white rice, depending on the type of flour you want to make. The more rice you buy at a time, the less expensive the rice flour becomes. If you have a warehouse store in your local area, consider buying the rice in bulk so you can make rice flour in large amounts or in small batches whenever you need it, regardless of quantity. A 25-pound (11.33 kilogram) bag should produce enough rice flour to last for several months.

      2. Purchase a blender or mixer that cracks grains. You need a blender or mixer that works specifically to crack grains; if you have one for wet ingredients, it will not work.

      3. Fill the container with 1 to 4 cups (240 mL to 960 mL) of rice. If you use more than this amount, you could compromise the quality of the resulting rice flour. If you want to make more than this at one time, do it in multiple batches.

      4. Mix the rice until the flour consistency is one you like. Mix it gradually until you get it as fine as desired. The finer the grain, the better it will work in baked goods because it will not drastically alter the texture of the final product.

      5. Use the resulting rice flour in gluten-free recipes. You can also use it to thicken soups, sauces, and gravies. It works as a thickener because it will not allow the liquid to separate from the other ingredients.

      6. Store any remaining rice flour in an air-tight container until you are ready to use it again. If the flour is not stored in an air-tight container, it may become moldy. You can store it in the freezer to help prevent the mold from forming, but if it is not in an air-tight container, it will absorb moisture and odor from other items. Brown rice flour typically lasts up to 5 months but may spoil sooner if the bran contains a lot of oil. White rice flour, when stored properly, is thought to have an indefinite shelf life.

      RICE FLOUR TIPS

    • You can also use a grinder to grind down the rice into flour as long as it is strong enough to crack the grains.
    • Using rice flour in a recipe is somewhat different than using wheat flour, because it tends to produce a crumby product. To combat issues with crumby texture or consistency, use 1 part Arrowroot to 4 parts rice flour in your recipe. Including more eggs in your recipe is another way to improve the texture.
    • A Cuisinart food processor can also be used. Follow manufacturers directions for grinding.
    • Rice flour absorbs more water than wheat, so you may need to add extra liquids to the recipe to produce the correct consistency.
    • Although it is a more-expensive option, a grain mill can help you to make your own rice flour at home if you do not like the way your mixer or blender is producing flour.
    • Brown rice is more nutritional than white rice.
    • Do not use minute rice. You should use raw, uncooked brown or white rice.

    RICE TEA

    Rice Tea is another tea that kids and grownups both love. Simmer 1/2 cup of rice in 6 cups of water for 15 minutes. Strain and add a few drops of Vanilla flavoring and sugar. Sprinkle with Cinnamon for extra flavor. Drink warm. This settles an upset stomach quickly. This is really good to stop vomiting or diarrhea fast. Rice tea really soothes the stomach and helps the patient get needed rest. This tea is a favorite of mine and it is good to drink simply because it tastes good. Very nutritious.
