    CACAO (CHOCOLATE) HERBAL DESCRIPTION

    Cacao (Theobroma Cacao) is also known as Cocoa, Cocoa Beans, Cocoa Pods, Chocolate Tree, and Chocolate.

    The scientific name Theobroma means "Food of the Gods", while Cacao comes from the Mixe-Zoquean languages used by the Olmecs. It is also believed to have been in use as early as 1000 BC. The Olmec, Maya, and Aztec Indians were the first to use Cacao. The Chocolate Tree grows 15 to 25 feet high. This tree grows near the equator due to the warm weather and high humidity. The flowers of this tree grow in clusters directly on the trunk and older branches. The fruit, called the Cacao pod, can contain 20 to 60 seeds, called beans. These pods are yellow until they are ripe then they are orange.

    By the mid 1500s it was brought to Europe where it was used as remedy for many conditions. In traditional folk medicine, Cacao is used to treat alopecia (loss of hair), burns, cough, dry lips, eyes, fever, listlessness, malaria, nephrosis (kidney disease), parturition (giving birth), pregnancy, rheumatism, snakebite, and wounds. Cacao seeds are the source of commercial cocoa, chocolate, and cocoa butter. Cocoa butter is used in confections and in the manufacture of tobacco, soap, and cosmetics.

    There was a time when the Cacao beans were used for currency. The beans were a major currency system in Pre-Columbian Mesoamerican civilizations. At one point the Aztec Empire received a yearly amount of 980 loads of Cacao, each load contained exactly 24,000 beans. Crime was prevalent even then for Cacao beans are known to have spawned counterfeiters during the Aztec Empire. In some areas, such as Yucatan, the beans were still used in place of small coins as late as the 1840’s.

    CACAO (CHOCOLATE) USES, HEALTH BENEFITS & SCIENTIFIC EVIDENCE

    Cacao was discovered to be a wonderful vehicle in delivering flavor to other medicines. Cacao has antiseptic, diuretic, and parasitic properties. Cacao can be used to help emaciated patients gain weight and it improves digestion, kidney and bowel function, and stimulates appetite. It is also used to help treat anemia, mental fatigue, poor breast milk production, consumption/tuberculosis, fever, gout, kidney stones, reduced longevity, and poor sexual appetite.

    Cacao bark (Cacao butter), leaves and flowers are sometimes used to treat burns, bowel dysfunction, cuts, and skin irritations. Cocoa Butter works well as an emollient to smooth wrinkles on skin. Chocolate has some very good reasons that it is the worldwide favorite food and flavoring, scientists are discovering more and more every day. Here are a few of the discoveries:

  • Cacao Beans are a good source of Vitamins A, B-1, B-2, B-3, C, E and pantothenic acid. They are also very rich in magnesium, calcium, iron, zinc, copper, manganese and potassium.
  • Dark Chocolate contains more Cacao and less fats and sugars, this can benefit the cholesterol profile on a positive note.
  • Cacao has close to twice the amount of antioxidant polyphenols as a glass of red wine and up to three times the amount in green tea.
  • Stimulants< found in Cacao are theophylline and caffeine. Cacao also stimulates the production of natural antidepressants in the body.
  • Magnesium found in Cocoa is believed to stimulate brain function. The magnesium is a mineral that is deficient in many people’s diet and is a key to proper brain performance.



  • CACAO PREPARATION STEPS

    Real chocolate is a cocoa paste made from cacao seeds. Cacao seeds are the fruit of the cacao tree, Theobroma cacao. Cacao is a Mayan word, not an Aztec word. The Aztecs, who rose to power hundreds of years after the Mayan collapse, called Vanilla 'tlilxochitl,' 'black flower.' It flavored their 'cacao water,' 'cacahuatl' in the Aztec tongue Nahuatl, 'chocol haa' in the ancestral Mayan tongue. Cacahuatl was made from vanilla, cocoa beans, honey, hot water and other spices, such as annatto. The Aztecs considered Cacahuatl to be aphrodisiac. Cacao was named Theobroma by Linnaeus, the word meaning 'food of the gods.'

    The fruit of the cacao tree is a huge berry, the cacao pod, usually egg or melon-shaped, 5 to 12 inches long and 3 to 5 inches wide. The cacao pod contains 30 to 40 seeds. It takes 20 to 25 pods to get 2 pounds of cocoa. Once the tree reaches maturity, fruit pods will sprout from its trunk and branches. The golden-red to purple fruit pods turn brown at maturity, at which time they are split open and the insides scooped out. Each pod generally produces 20 to 40 almond-shaped cacao beans.

    There are three main products from cocoa: cocoa powder, plain chocolate and milk chocolate. The first few stages are the same for both cocoa powder and chocolate. Fermentation and drying, and often roasting are usually performed in the country where the cocoa was grown.

  • Fermentation: Beans removed from the pods are left to ferment for 5 to 6 days. This is usually at a raised temperature (113 to 122°F). The seeds germinate and die.

  • Drying: For 1 to 2 weeks the beans are left on mats or trays in the sun to dry, during this process they loose approximately half their weight, while the enzyme action from the fermentation continues.

  • Roasting: The beans are roasted for 1 to 2 hours at 210 to 220°F for chocolate or 240 to 250°F for cocoa powder. This process helps to develop the flavor and aroma.

  • Winnowing: The beans have their shells removed by a cracking and fanning process, producing 'cocoa nibs'.

  • Dutching (Alkalizing): This process was invented by the Dutchman Van Houten, cocoa nibs are heated with potassium or sodium carbonates before the grindng process to improve the ease with which the resulting cocoa mixes. This process also weakens the flavor and darkens the drink, and is not used by all manufactures.

  • Grinding: The nibs are then ground to produce what is known as chocolate liquor. It is here that the paths for cocoa powder and chocolate split.

  • Cocoa Dutching: This step is more or less required to make cocoa properly, but is identical to the Dutching step above.

  • Pressing: The Chocolate is pressed to remove the fat. This was originally done by boiling and skimming, but Van Houten produced a hydraulic press, which was far more efficient. After the grinding process there is approximately 53-percent cocoa butter, this is reduced to 27-percent by pressing. The cocoa cake and cocoa butter are used in the production of chocolate, although cocoa butter is only likely to find it's way into expensive quality chocolate.

  • Pulverizing: The cocoa 'cake' is then pulverized to produce a very fine powder, this is then sifted to produce cocoa powder.

  • Chocolate Mixing: The ingredients are mixed. These will include cocoa cake and sugar, and may also include cocoa butter, milk, vegetable fats and flavorings. The chocolate ingredients are places in a specialized mixer that ensures that the ingredients are correctly mixed together, and help to start making the chocolate smooth. This process also improves the flavor.

  • Conching: This process can take several days, but is essential for smooth eating chocolate. The ingredients are kept warm (131 to 190°F), and have heavy rollers passed over a curved bed, the chocolate is 'crushed' and then slops over the side of the bed. This helps to improve the flavor, and is critical for quality dark chocolate.

  • Tempering: This process stops the cocoa butter crystalizing out of the chocolate, giving a blotchy, granular appearance. The chocolate mix is heated and then carefully cooled to create the required crystal structure.

  • Molding: The chocolate is now ready to be used, and can be molded into the appropriate shape, or used for coating.


  • COCOA BUTTER

    Cocoa Butter is an emollient and is recommended for stretch marks, skin softening, wrinkles, chapped hands, lips, pregnant skin, skin irritations. Cocoa Butter is extracted from the seed kernels of the Cacao tree (Theobroma cacao), the source of cocoa and chocolate. It is further refined to yield a tan colored butter with pleasant cocoa (chocolate-like) odor. A relatively hard butter with steep melting curve is ideal for body care products. It may be used in a variety of cosmetic, toiletry and pharmaceutical applications to reduce cutaneous dryness and improve skin elasticity while imparting a natural color and cocoa odor, desirable in many of today’s natural formulations. The butter is of significant commercial importance in foods, pharmaceuticals and cosmetic applications.

    INTRODUCTION: Cocoa was named Theobroma and means ‘food of the gods’. Cocoa Butter is becoming increasingly popular in the natural bodycare and cosmetic industries for good reasons. It has been used for centuries in Africa for its moisturizing and healing properties, where it has been used to protect and condition skin.

    BENEFITS: Cocoa Butter contains natural antioxidants. It is naturally rich in Vitamin E as well as a number of other vitamins and minerals. Vitamin E helps to soothe, hydrate, and balance the skin. Lotions and oils containing Cocoa Butter are often used in aromatherapy massage to promote relaxation and the feeling of well-being.     EXTRACTION METHODS: The four major West African cocoa producers are the Ivory Coast, Ghana, Nigeria, and Cameroon. The Ivory Coast produces about 43 percent of the world’s cocoa, and the next largest producer is Ghana with about 14 percent of the world's output. Nigeria is one of the smallest and produces about 6 percent of the world's cocoa. Outside of West Africa, the major producers of cocoa are Indonesia, Brazil, Malaysia, Ecuador, and the Dominican Republic. After cocoa beans have been received at the processing location, they are inspected and thoroughly cleaned of all extraneous matter, such as sticks, stones, and metal fragments, as well as broken beans. Once the beans are cleaned they are roasted and then ground into a paste. The heat generated by this process causes the Cocoa Butter in the nib to melt, hence the name 'cocoa liquor'. Chocolate liquor destined for processing into Cocoa Butter is refined to a very small particle size because it is easier to reduce the particle size early when the butter is still present. A smaller particle size makes butter extraction easier.

    USING COCOA BUTTER: Cocoa Butter is one of the most stable, highly concentrated natural fats known, and melts at body temperature so that it is readily absorbed into the skin. Since Cocoa Butter absorbs so quickly, it immediately relieves dry and irritated skin. There are many different uses for Cocoa Butter.

    PRECAUTIONS: Those with serious or persistent skin problems, such as eczema, should consult a physician before using Cocoa Butter. Cocoa Butter is often mistakenly used by people to expedite a suntan and while it will enhance a natural tan, it does not have a sun protection factor (SPF). To prevent the harmful effects of the sun, use a suntan lotion with an SPF of at least 15 that contains Cocoa Butter. Not recommended by those with nut allergies.


    Cocoa Butter is available in a cosmetic-grade butter (not food-grade) and as a food grade product. The Butter is solid at room temperature, but melts readily on contact with the skin.



    COCOA BUTTER BODY LOTION RECIPE

    1/4 cup grated Cocoa Butter
    1 tablespoon Coconut Oil
    3 tablespoons Sunflower Oil
    11 tablespoons grated Beeswax

    Combine all ingredients, then melt in a glass container in the microwave. Stir well, and continue stirring until the mixture cools. Allow to cool completely, then stir a little more. Spoon into small jars with lids.



    COCOA BUTTER HAND CREAM RECIPE

    2 cups Warm Water
    1.5 cups Glycerin
    1/2 ounce Spirits of Ammonia
    1/2 ounce Cocoa Butter
    1/2 teaspoon Boric Acid
    1 cup Stearic Acid

    Combine in a glass or enamel pan the cocoa butter, glycerin and stearic acid. Melt over low heat. Remove to mixing bowl and add ammonia. Stir until milky. Add boric acid to warm water. Add to first mixture. Mix with beater for 10 minutes at high speed. Perfume and color as desired. Age for 2 weeks before using.

    CACAO (CHOCOLATE) DOSAGE INFORMATION

    Cacao beans and nibs have a long and colorful history, beginning in Central and South America before 1500 BC.
