    Antioxidants are vitamins, minerals, and other nutrients that protect and repair cells from damage caused by free radicals. Many experts believe this damage plays a part in a number of chronic diseases, including hardening of the arteries (atherosclerosis), cancer, and arthritis. Free radicals can also interfere with your immune system. So, fighting off damage with antioxidants helps keep your immune system strong, making you better able to ward off colds, flu, and other infections.

    Antioxidants are compounds that neutralize the cellular-damaging effects of free radicals. Free radicals are produced naturally in your body, but when you exercise hard, your body pumps out more free radicals. Environmental factors such as pollution, the sun, cigarette smoke, and herbicides can also spawn free radicals. The danger is that free-radical damage may lead to cancer. Antioxidants interact with and stabilize free radicals and may prevent some of the damage that free radicals otherwise might cause. As an active person, more antioxidants may help you slow the aging process, ward off cancer and stress, and promote good health.

    One of the best ways to keep your immune system strong and prevent colds and flu is to shop your supermarket's produce aisle. Experts say a diet rich in fruits and vegetables can help you ward off infections like colds and flu. That is because these super foods contain immune-boosting antioxidants.

    Antioxidants are abundant in fruits and vegetables, as well as in other foods, including nuts, grains, and some meats, poultry and fish. Adding more fruit and vegetables of any kind to your diet will improve your health. But some foods are higher in antioxidants than others. The three major antioxidant vitamins are Beta Carotene, Vitamin C, and Vitamin E. You will find them in colorful fruits and vegetables - especially those with purple, blue, red, orange, and yellow hues. To get the biggest benefits of antioxidants, eat these foods raw or lightly steamed; do not overcook or boil.

    Vitamins are not the only antioxidants in food. Other antioxidants that may help boost immnity inlcude Selenium and Zinc. The list below describes food sources of common antioxidants.
      BETA CAROTENE: Beta Carotenes are found in many foods that are orange in color, including apricots, asparagus, beets, broccoli, cantaloupe, carrots, corn, green peppers, kale, legumes, mangos, turnip and collard greens, nectarines, peaches, pink grapefruit, pumpkin, squash, spinach, sweet potato, tangerines, tomatoes, and watermelon.

      LUTEIN: Best known for its association with healthy eyes, lutein is abundant in green, leafy vegetables such as collard greens, spinach and kale.

      LYCOPENE: A potent antioxidant found in apicots, blood oranges, guava, papaya, pink grapefruit, tomatoes, watermelon, and other foods. Estimates suggest that 85 percent of American dietary intake of lycopene comes from tomatoes and tomato products.

      SELENIUM: Selenium is actually a mineral, not an antioxidant nutrient, but it is a component of antioxidant enzymes. Plant foods such as rice and wheat are the major dietary sources of selenium in most countries. However, in the United States, animals that eat grains or plants grown in selenium-rich soil have higher levels of selenium in their muscle. In the United States, meats and bread are common sources of dietary selenium. Brazil nuts also contain large quantities of selenium. Other foods include tuna, beef, poultry, fortified breads and other grain products.

      VITAMIN A: Vitamin A is found in three main forms: vitamin A-1, vitamin A-2 and vitamin A-3. Foods rich in vitamin A include liver, sweet potatoes, carrots, milk, egg yolks and mozzarella cheese.

      VITAMIN C: Vitamin C is also called ascorbic acid. Vitamin C can be found in high abundance in many fruits (citrus), different vegetables (green peppers), and is also found in cereals, beef, poultry and fish. Berries, broccoli, Brussels sprouts, cantaloupe, cauliflower, grapefruit, honeydew, kale, kiwi, mangos, nectarines, oranges, papaya, green peppers, red peppers, yellow peppers, snow peas, sweet potato, strawberries and tomatoes are all high in Vitamin C.

      VITAMIN E: Vitamin E is also known as alpha-tocopherol. Vitamin E is found in almonds; in many oils including wheat germ, safflower, corn and soybean oils; and is also found in broccoli, carrots, chard, mustard and turnip greens, mangos, nuts, papaya, pumpkin, red peppers, spinach, and sunflower seeds as well as many other foods.

      ZINC: Zinc is found in oysters, red meat, poultry, beans nuts, seafood, whole grains, fortified cereals, and dairy products.

    Other super foods that are rich in antioxidants include: Alfalfa sprouts, all berries, apples, bananas, dried beans, eggplant, onions, plums, prunes, raisins, and red grapes,


    Where do Americans typically get their antioxidants? Coffee is number one on the list. Other popular sources include black tea, green tea, red wine, beer, and cocoa. Many recent studies emphasize the health benefits of red wine and tea, known to be high in antioxidants, but researchers at Cornell University have shown that hot chocolate contains more antioxidants per cup than a similar serving of red wine or tea. Their study, done in 2003, compared the total antioxidant content of these three popular beverages. To gain a better understanding of how these beverages compare in terms of antioxidants, the researchers tested all three beverages using similar serving sizes and conditions. The beverages tested included a cup of hot water containing 2 tablespoons of pure cocoa powder, close to the amount of cocoa in a normal-size packet of instant hot chocolate, a cup of water containing one bag of green tea, a cup of black tea, and 5 ounces of red wine (California merlot).

    Using special analytical techniques to evaluate the total antioxidant content in each beverage, the researchers showed the antioxidant concentration in cocoa was the highest among those tested. The hot chocolate was almost two times stronger in antioxidants than red wine, two to three times stronger than green tea, and four to five times stronger than that of black tea.

    Antioxidant-rich cocoa is also found in many different products including desserts, sauces, liqueurs, and candy bars, which differ widely in their cocoa content, and many companies are advertising their chocolate to contain antioxidants while emphasizing the natural qualities of the chocolate. Keep in mind, a normal 40-gram bar of chocolate contains about 8 grams of saturated fat, compared to only 0.3 grams in an average cup of hot cocoa.

    Color your plate with green, orange, red, yellow and brown. The more color from fruits and veggies you have, the more likely you are going for natural sources of antioxidants - and throw in a cup of hot chocolate once in a while.

    For optimal health and immune functioning, you should eat the recommended dietary allowance (RDA) of the antioxidant vitamins and minerals. That is the amount of a vitamin or nutrient that you need to stay healthy and avoid a deficiency. If you have health issues requiring treatment or deficiencies, then the therapeutic dosages would be higher than given below. Here are the RDAs for some antioxidants:

    BETA CAROTENE: There is no RDA for beta-carotene. But the Institute of Medicine says that if you get 3 to 6 milligrams of beta-carotene daily, your body will have the levels that may lower risk of chronic diseases.

    SELENIUM: 55 micrograms for men or women.

    VITAMIN C: 90 milligrams for men, 75 milligrams for women; smokers should get extra vitamin C: 125 milligrams for men and 110 milligrams for women.

    VITAMIN E: 15 milligrams for men and women.

    ZINC: 11 milligrams for men, 8 milligrams for women; if you are a strict vegetarian, you may require as much as 50% more dietary zinc. That’s because your body absorbs less zinc when you have a diet rich in plant-based foods.


    Brightly colored foods are usually powerful antioxidants. If you are eating plenty of them, you can get by without antioxidant supplementation. But even elite athletes are almost always are found to be deficient in some antioxidants. Whenever our bodies endure stress - whether it is from physical activity, sun damage, pollution, or day-to-day family and job stresses - we suffer cellular damage. It is unavoidable. Those damaged cells are known as free radicals. We want to minimize their impact and get them out of our system immediately. Antioxidants maintain order among your cells and slow the aging process. They are critical to your immediate and long-term health.

    You can get antioxidants from taking a vitamin or a supplement, but you may be missing out on other nutrients that could strengthen the immune system. Foods contain many different nutrients that work together to promote health. Many nutrients are still being discovered and their qualities and functions researched. Supplements are not meant to replace whole foods and a healthy diet - only to ":supplement" an established diet that may be deficient or to treat a known nutrient deficiency or health ailment. For example, researchers delving into the mysteries of fruits and vegetables and the complex antioxidants they contain have discovered benefits of:

    QUERCETIN: A plant-based chemical (phytochemical) found in apples, onions, teas, red wines, and other foods; it fights inflammation and may help reduce allergies.

    LUTEOLIN: A flavonoid found in abundance in celery and green peppers; it also fights inflammation, and one study showed it may help protect against inflammatory brain conditions like Alzheimer's.

    CATECHINS: a type of flavonoid found in tea; catechins in tea may help reduce risk of heart disease, cancer, and Alzheimer’s disease.

    If you cannot get enough antioxidants in your diet by eating fresh produce, some experts recommend taking a multivitamin that contains minerals, too. But be cautious about taking individual immune system supplements to boost immunity. With antioxidants, as with most anything, moderation is key. Vitamins A and E, for example, are lipid-based stored in the body and eliminated slowly. Getting too much can be toxic. Vitamin C, however is water-based and excess will be eliminated daily, thus this nutrient must be replaced daily by eating Vitamin-C rich foods and taking a supplement, if needed.

    There are products available that combine two or more of these vital nutrients. Using a combination supplement is often more convenient than taking many different products separately. It is now easy to find formulas that give you a balance of multiple antioxidants.

    Some new compounds, collectively called pyridinols, are being tested by a group of Vanderbilt University chemists. These were created by removing carbon atoms and adding nitrogen atoms to d-alpha-tocopherol (vitamin E). Some of these compounds apparently are over a hundred times more effective than natural vitamin E as antioxidants, but much testing is needed before any human will be taking these supplements. Scientists caution that it takes years of research and trials before a product is ready to market.

    At this point, it is an open question whether or not these synthetic antioxidants will have any value beyond use in the laboratory.



    Super antioxidants are blends of naturally occurring substances that distill a lot of antioxidant power into dietary supplements or similar products. The actual elements that scientists referred to as super antioxidants are often based on Oligomeric Procyanthocyanidins (OPC), which researchers have found can be even more effective in battling free radicals than regular antioxidants. Free radicals are harmful elements that can wear down the natural processes of the body over time. Antioxidants help heal the body by fighting off the affects of free radicals.

    Some OPCs and other super antioxidants can be up to 50 times as effective as the antioxidant value in regular vitamins and minerals such as vitamin E, according to some health researchers. OPCs are also often used to treat vascular diseases, because they help support the health of blood vessels. Other similar elements are often called proanthocyanidins, procyanidins, or proanthocyanidolic oligomers (PCO).

    Though there is continued debate about some of the health benefits of super antioxidants, some believe that they do provide for better health in conjunction with an antioxidant rich diet. Individuals can get regular antioxidants from a wide range of foods, especially from green leafy vegetables or unprocessed fruits. Grapes and grape seeds are just one of the natural food choices that are rich in antioxidants.

    Vitamin C, vitamin E and beta-carotene all contain antioxidant value. Looking at dietary charts can help individuals find foods rich in antioxidants for rejuvenating the body and creating a healthier future. Super antioxidant supplements can add even more power for using antioxidants against chronic diseases or other conditions.

    In addition to looking at OPCs, scientists have zeroed in on particular types of super antioxidant elements, the most potent of which are called Epigallocatechin Gallates (EGCG). Nutritionists and other health researchers continue to look at ways that these kinds of elements can help with various issues like high blood pressure, HIV, cancer, and many other serious conditions.     Scientists have also created an ORAC (Oxygen Radical Absorbance Capacity) value to measure the potency of antioxidants in foods and other elements like dietary supplements.     Your body needs antioxidants to protect your cells from damaging free radicals. These free radicals can cause oxidation in your body that, similar to rust on a car, will degrade your cells and organs leading to disease and aging. Not only do antioxidants help to prevent oxidation, but, according to the American Dietetic Association, they may also decrease your risk of infection, heart disease and cancer while boosting the function of your immune system. We are all affected by free radicals, as they are a natural byproduct produced in your body. Exposure to environmental toxins like cigarette smoke and radiation can also increase the free radicals in your system.

    The bright red color of tomatoes is supplied by a photochemical called lycopene, which is in the same family of carotenoids (natural fat-soluble pigments) as the orange-colored betacarotene in carrots. Research shows that lycopene can be absorbed more efficiently by the body if processed into ketchup, juice, sauce and paste. A proven antioxidant, lycopene appears to be different from other carotenoids because its concentration in body tissue tends to be higher. Lycopene is deposited in the liver, lungs, prostate gland, skin and colon. Research has suggested that frequent consumption of tomato products or lycopene may be associated with a lower risk of prostate cancer. A study of more than 47,000 men, conducted by Harvard Medical School, concluded that those who ate tomato sauce or other types of cooked tomatoes two or more times a week had a 20 percent less chance of developing prostate cancer.

    Curcumin is a compound found in turmeric. The Alzheimer's Society reports that research from the University of California in Los Angeles has suggested the idea that curcumin might play a role in slowing the progression of this disease. Mice were injected with amyloid proteins to create conditions similar to those in patients suffering from dementia.     The following are a few of the most powerful antioxidant compounds to include in your diet.


    This compound, found in red raspberries, may be one of the most potent cancer fighters around. It is also a cancer inhibitor and is anti-mutagenic. Research at the Hollings Cancer Center at the Medical University of South Carolina (MUSC) found that ellagic acid slows the growth of abnormal colon cells in humans and prevents cells infected with human papilloma virus (HPV), which is linked to cervical cancer, from developing. It also promotes apoptosis, or cell death, of cancer cells without harming healthy cells, a process that may be beneficial in fighting prostate, breast, lung, esophageal and skin cancers. Other studies have also shown that ellagic acid may fight heart disease, reduce the risk of birth defects and speed wound healing. It is found in Red raspberries, pomegranate, strawberries, blueberries and walnuts.


    These antioxidants, which are also called OPCs (for oligomeric procyanidins) or PCOs (for procyanidolic oligomers), belong to the flavonoid family. They are the compounds that give red and blue fruits their color, and they have been found to strengthen capillaries, improve vision in the dark, support the integrity of vascular walls and prevent and reverse blood clotting in smokers. They also may reduce the risk of heart disease and cancer, and protect against urinary tract infections. They are found in raisins, grape seeds, grape skins, bilberry, cranberry, black currant, green tea, black tea, pine bark, cocoa.


    Glutathione is a very interesting, very small molecule that is found in every cell. It is the most important antioxidant because it is within the cell. Along with neutralizing free radicals, glutathione may boost the immune system and help the liver remove toxins from the body. People who have cancer, AIDS, or other very serious disease almost invariably are depleted in glutathione. Glutathione is extremely important for nourishing intracellular health. This is the reason glutathione has been called the master antioxidant. No other antioxidant is as important to overall health as this antioxidant. It is the regulator and regenerator of immune cells and the most valuable detoxifying agent in the human body. Low levels are associated with hepatic dysfunction, immune dysfunction, cardiac disease, premature aging and death. Glutathione is found in goat's milk, whey protein, asparagus, avocado, parsley, and broccoli.


    These micronutrients represent a large category of antioxidants that include flavonoids and anthocyanidins. According to a study in the American Journal of Clinical Nutrition, evidence is emerging that these compounds prevent the spread of a number of degenerative conditions, including cancer and cardiovascular and neurodegenerative diseases. However, the amount that you eat, and the source, make a big difference in the benefits you receive. For instance, cooking may cause fruits and vegetables to lose polyphenol content. Research is underway to determine the best sources of polyphenols. Polyphenols are found in strawberries, green tea, black tea, grape skins, red wine, onions, broccoli, greens, apples, blueberries, cocoa (most all fruits and vegetables contain some polyphenols).


    This well-known, fat-soluble vitamin may, according to the Mayo Clinic, protect against cancer, infertility and cataracts and slow the progression of Alzheimer's disease. The most popular form of vitamin E is alpha-tocopherol, however, gamma-tocopherol also appears to provide major benefits. A study in the March 2005 Journal of the National Cancer Institute found that prostate cancer risks went down significantly with high levels of vitamin E. Specifically, men with the highest levels of alpha-tocopherol in their blood were 51 percent less likely to develop prostate cancer while those with the highest levels of gamma-tocopherol were 43 percent less likely to develop the disease. Vitamin E is found in nuts, vegetable oils, wheat germ oil, and green leafy vegetables.


    These fat-soluble micronutrients, the most well-known of which is beta-carotene (which can be converted into vitamin A in the body), fight free radicals and inhibit and prevent cervical, oral, lung, prostate, colon, endometrial and esophageal cancers. They also prevent lipid peroxidation, which generates free radicals, enhance immune function, stimulate the release of natural killer cells, which directly attack tumor cells and protect cells from DNA damage. Carotenoids are red, orange, dark green and yellow fruits and vegetables, such as sweet potatoes, apricots, peaches, chard, carrots, cantaloupe, pumpkin and tomatoes. Eggs and spirulina are also good sources.


    Unless you eat plenty of fruits and vegetables every day, you may not be getting enough antioxidants in your diet. About 85 percent of Americans do not include enough fresh fruits and vegetables in their daily diet. If you are a smoker or are exposed to environmental toxins (such as smog and chemicals used in foods, water, cleansers, and so forth), then antioxidants are particularly important to you and your health. Here are some ideas for adding more antioxidants to your daily diet. Antioxidant supplements may be considered in addition to your dietary plan.


    To make this salad, put together in a bowl a variety of mixed greens. Add some dried organic cranberries, fresh blueberries and a variety of nuts. Choose fresh fruits and vegetable with a variety of colors from the rainbow. Sprouted beans and seeds can be added to the blend for more nutritional impact. Use a low-fat salad dressing to compliment the mixture. Toss lightly and enjoy with a freshly made veggie-fruit smoothie or juice on the side.       6 ounces Butternut or Acorn Squash (Baked, Skinned, & Diced)
      1 Yellow Squash (Diced)
      1/2 Red Onions (Chopped & Diced)
      3 Cloves Fresh Garlic (Chopped)
      1 Avocado (Diced)
      1 Tomato (Diced)
      1 lemon
      1 Lime
      1 teaspoon Sea Salt
      1/2 teaspoon Crushed Red Pepper
      1/2 teaspoon Black Pepper
      2 tablespoons Olive Oil
      1 tablespoon Flaxseed Oil


    1. Run hot water over the corn and edamame in a colander until completely defrosted then place in a large salad bowl.
    2. Add the next four ingredients to the bowl starting with the red onions.
    3. Juice the lemon and lime and place in a separate small bowl or cup.
    4. Add the last 5 ingredients starting with the salt, to the citrus juice mixture. Stir well and pour into the salad bowl of vegetables.
    5. Serve immediately.

    Dressing Ingredients
      1/4 cup Kombucha, Original Flavor
      1 Orange (Juiced)
      1 Lemon (Juiced)
      2 tablespoons Raw Honey (To Taste)
      1/4 cup Extra Virgin Olive Oil
      1 teaspoon Sumac
      1/2 teaspoon Red Pepper Flakes
      Sea Salt (To Taste)
      Fresh Ground Black Pepper (To Taste)

    1. In a large serving bowl, mix gently black rice, chickpeas, avocado, pomegranate and arugula.
    2. Prepare dressing by wisking in a medium bowl kombucha, orange and lemon juice and raw honey. Drizzle olive oil a bit at a time and keep whisking, until it is all incorporated. Sprinkle sumac, pepper flakes, salt and pepper. Taste and season again, if necessary.
    3. Pour dressing over salad and mix very gently. Until salad is evenly coated.

    Dressing Ingredients
      2 tablespoons Balsamic Vinegar
      2 tablespoons Lemon Juice
      2 tablespoons Olive Oil (or Flax or Hemp Oil)
      1 teaspoon Maple Syrup
      1/4 teaspoon Sea Salt (Optional)
      1/4 teaspoon Ground Black Pepper

    Mix the kale, avocado carrots, beets, cranberries and walnuts. In a separate bowl whisk together dressing ingredients. Add the dressing to the kale and stir. Set aside for 30 to 60 minutes to blend flavors, retossing every 10 minutes.


      1 Mango
      1 cup Blueberries
      1 Pomegranate
      2 teaspoons Lime Juice

    1. Cut the mango in half around the stone. With a knife, criss-cross the flesh of the mango halves into 1/2-inch squares. Push the diced mango flesh outward and then slice off the squares from the skin into a bowl.
    2. Tumble in the blueberries.
    3. Halve the pomegranate and bash out the seeds with a wooden spoon over the mango.
    4. Squeeze lime juice over the fruit mixture and serve.
