    SAVORY HERB

    Savory has been a valuable medicinal and cullinary herb for at least 2,000 years. The two common aromatic varieties, Summer Savory and Winter Savory, are members of the mint family and have very similar therapeutic effects. Summer Savory is highly regarded as a spice and a folk medicine and Winter Savory is a perennial garden favorite. The more common essential oil is made from the Summer Savory Satureja hortensis, but Winter Savory Satureja montana is considered more potent.

    SAVORY, SUMMER PROFILE

  • Botanical Name: Saturegja Hortensis
  • Also Known As: Creeping Savory, and Summer Savoury, Satyr's Herb, Bean Herb, Bohenkraut.


  • Summer savory is widely renowned as a culinary herb with a smoother flavor then Winter Savory and similar to marjoram, but unique to itself. Originally introduced to England from the Mediterranean, it quickly took its place along with thyme, marjoram and basil. Indeed, it was one of the herbs that Charlemagne specifically ordered planted in his own royal garden. There are two major types of savory in common cultivation, winter and summer savory. Summer savory is lighter in flavor, but still has the characteristic minty-peppery flavor that is peculiar to the species. It has been used medicinally as well as for cooking. The Greeks, for instance, used it to treat earaches and toothaches, and Roman midwives used it as an all purpose disinfectant. According to ancient Greek lore, Pliny the Elder gave it the name satureja, which is a derivative of the word satyr. This was because satyrs were thought to have lived in fields of savory; this also implies that the herb itself was why the satyrs' were so "passionate", or so the Greeks thought. Whether or not it's true, there's no doubt that summer savory has earned its place in the culinary annals. It is often used to flavor spring vegetables, potatoes and cheeses. It is a primary ingredient in the French herbs Provencal. At least one modern herbal notes that the presence of p-cymene in the volatile oil may make it useful in treatment of diarrhea and sore throats.

    CONSTITUENTS: Summer Savory contains 0.3 to 2% of a volatile oil consisting of about 30% carvacrol, 20 to 30% p-cymene, and lesser amounts of numerous other constituents. The plant also contains 4 to 8.5% of tannin.


    PARTS USED: Dried or fresh leaves.

    TYPICAL PREPARATIONS: Leaves fresh or dried in food, as a tea and in personal care preparations. Summer savory can add a touch of peppery spice to recipes and is a prime ingredient in many herbal mixtures used to marinate meat. While it has no enormous medicinal claims, there's reason to believe that its traditional use of treating digestive upsets may have some basis in fact.

Winter savory has a stronger, sharper flavor than its summer cousin, but it still blends well with thyme, sage and rosemary as well as most mints. While its most popular uses are culinary, winter savory has often been used for medicinal purposes over the course of history. It is a widely recommended remedy for flatulence and digestive upsets, including colic, diarrhea and indigestion. Its antiseptic and astringent properties make it a good treatment for sore throats, and it has been used as a remedy for excessive thirst in diabetics. Whether used for its medicinal properties or to flavor food, winter savory has been around since the days of the Romans, and before. Its sharp, spicy-peppery tang makes it a favorite flavoring for pork, beef and poultry, and a popular addition to soups and salads.

    CONSTITUENTS: Carvacrol, a position isomer of thymol (30 to 45%), p-cymene (max. 30%), y-terpinene, a-pinene (8%), dipentene, borneol, 1-linalool, terpineol and 1-carvone.

    SAVORY ESSENTIAL OIL

    Extracted from the stems and leaves by steam distillation, Savory oil has a fresh, herbal, slightly medicinal aroma that revitalizes a sluggish nervous system. In addition, the oil is an effective remedy for many digestive ailments, including bloating, cramps, flatulence and diarrhea. For respiratory problems, such as bronchitis and asthma, inhalations with Savory oil loosen mucus and soothe irritated and inflamed bronchial tubes. Furthermore, the oil stimulates circulation, which helps flush toxins from the body and relieves muscle tension and pain. When the oil is applied topically, it has a beneficial effect on fungal infections, insect bites, acne and inflamed, oily skin. On an emotional level, the oil restores energy and relieves apathy and dejection. For hundreds of years, though both Savories were used as sex drugs. The Summer variety was commonly used as an aphrodisiac, while the Winter Savory was thought to decrease the sex drive (anaphrodisiac).

    CULINARY USES

    In the kitchen, Summer Savory is used to flavor beans, other legumes and sausages.

    Winter Savory is a traditional ingredient in salami.

    MEDICINAL USES

    Summer Savory is used as a folk remedy for digestive problems. It helps reduce flatulence, stimulate the appetite, and reduce the symptoms of diarrhea. A tea made from Summer Savory is useful as an expectorant and cough remedy. The tea is also used to help quench extreme thirst in diabetics. Small amount of Summer Savory oil combined with hot water work well to soothe minor throat irritations.

    Winter Savory has been used as a remedy for gas pains, stimulating the appetite, and an antiseptic gargle for minor throat irritations.

    THERAPEUTIC EFFECT

    Summer Savory has antiseptic, expectorant, tonic, and astringent properties. Winter Savory is said to have some antiseptic, expectorant, and tonic qualities as well.

    Savory oil is effective for intestinal cramps, diarrhea, nervous stomach complaints, flatulence, poorly healing wounds, acne, insect bites, bronchitis, asthma, fatigue, malaise and muscle pain. Cymene, thymol, carvacrol and phenol give the oil its stimulating properties and help boost blood circulation, which eases muscle pain and tension. The oil's antiseptic quality helps treat intestinal ailments, respiratory conditions and skin inflammations. Savory oil also activates the adrenal glands. In addition, it is believed to be an aphrodisiac.
